Peanut Butter and Chocolate Popsicles
A quick and healthy recipe for popsicles made with chocolate, peanut butter and greek yogurt.
Chocolate Peanut Butter Popsicles
1 cup Greek yogurt
1/4 cup natural peanut butter
1 teaspoon vanilla extract
1/4 cup natural honey
pinch of salt
2 oz dark chocolate
2 tablespoons chopped peanuts
In a large bowl mix together all of the above ingredients until smooth. Set into popsicle moulds for a minimum of 6 hours. Once frozen, run warm water over the popsicle mould for a few seconds so the peanut butter pops are easier to remove. Dip the tops of the popsicles into melted dark chocolate (melt the chocolate in microwave for 30 seconds) then immediately sprinkle with chopped peanuts. Hold the popsicle until the chocolate has hardened (approx 30 seconds) then place wrap it in wax paper and store for up to a week or enjoy immediately.
