Cranberry Bliss Bars

So, before work in December I had this really bad habit of grabbing starbucks and along with my coffee I kept getting a cranberry bliss bar.  It's a problem how much I like these things I swear.  So, since the holidays aren't exactly the cheapest time of the year, I decided to try and save a few bucks by making them myself.  Here's the recipe:

Bar Base:

  • 1 cup softened butter
  • 1½ cups packed brown sugar
  • 2 eggs
  • Zest of one orange
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 cups all purpose flour
  • 1 cup white chocolate chips
  • ¾ cup dried cranberries

Cream Cheese Frosting:

  • 226 g (8 oz) softened cream cheese
  • 1½ cups icing sugar
  • 1 tbsp orange juice
  • ½ tsp vanilla extract
  • ⅓ cup dried cranberries, roughly chopped


  • Melted white chocolate (about 2 squares)
  • Handful of dried cranberries


Preheat oven to 350 F. Cream the butter and brown sugar, then add in the eggs one at a time followed by the orange zest and vanilla extract.  In a separate bowl, combine, flour, baking powder and salt.  Add the dry mixture into the wet and mix until just combined.  Stir in the cranberries and white chocolate. Spray a 9X13 pan with non stick spray and line the bottom with parchment.  Spread the mixture evenly into the pan and bake for 18-22 minutes or until a tooth pick comes out clean. 

Mix cream cheese, icing sugar, orange juice and vanilla until combined.  Stir in the cranberries, cover with plastic and set aside. 

Once bars are out of the oven and cooled, remove from the pan and spread the frosting evenly over the top.  Drizzle with white chocolate and sprinkle with some dried cranberries.
