These broiled grapefruits are a great way to start the day. A sprinkle of sugar, bruleed under the broiler in your oven leaves the grapefruits tender and sweet. This recipe is a perfect way to use some of the amazing grapefruits that are in season and takes only a few minutes.
Start by setting your oven's broiler on high and placing an oven rack one slot above the centre. We want to slightly caramelize the tops not char them so don't put the rack too close to the top of the oven. Slice your grapefruits in two and sprinkle the surface of each with a tablespoon of sugar. Set the grapefruits, flesh side up on a pan and pop them in the oven for 5-10 minutes. This is a wide range in time to account for the wide variance in oven broiler temperatures. You know your oven best so be sure to watch the grapefruits carefully while they broil. Once the white pith inside the skin starts to brown and the sugar on top of the grapefruits begins to boil and caramelize, remove the grapefruits. Let them cool for 2 minutes then transfer them into bowls and use a grapefruit knife to segment them before serving.
